## Ingredients

- 4 (6 oz) fresh Atlantic salmon fillets, skin-on
- 1 lb Brussels sprouts, trimmed and halved
- 2 medium sweet potatoes, peeled and diced
- 3 tbsp olive oil, divided
- 2 tbsp whole grain mustard
- 2 tbsp pure maple syrup
- 1 tsp garlic powder
- Salt and freshly ground black pepper to taste

## Instructions

1. Preheat your oven to 400°F (200°C) and lightly grease a large [baking sheet](https://news.freshaig.com/tag/sheet-pan/).
2. In a large bowl, toss the Brussels sprouts and sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet and roast for 15 minutes.
3. While the vegetables roast, whisk together the remaining 1 tablespoon of olive oil, whole grain mustard, maple syrup, and garlic powder in a small bowl.
4. Remove the sheet pan from the oven. Push the vegetables to the edges to make room in the center.
5. Place the [salmon](https://news.freshaig.com/tag/salmon/) fillets skin-side down in the center of the pan. Brush the maple-mustard glaze generously over the top of each fillet.
6. Return the pan to the oven and bake for an additional 10 to 12 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
7. Serve immediately directly from the pan for a classic family dinner.
