## Ingredients

- 24 fresh Eastern [oysters](https://news.freshaig.com/tag/oysters/) on the half shell
- 4 slices of bacon, finely chopped
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1/2 cup finely chopped yellow onion
- 1/4 cup finely chopped green bell pepper
- 1/4 cup finely chopped celery
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup finely chopped raw pink shrimp
- 1/3 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- Salt and pepper to taste

## Instructions

1. Preheat your oven to 400°F (200°C) and arrange the [freshly shucked oysters](https://news.freshaig.com/how-to-shuck-oysters/) on a baking sheet lined with rock salt to keep them steady.
2. In a skillet over medium heat, fry the chopped bacon until crispy, then remove and set aside, leaving the bacon fat in the pan.
3. Add the butter to the skillet, then whisk in the flour to create a light roux, cooking for about 2 minutes.
4. Stir in the onion, bell pepper, and celery, cooking until softened.
5. Gradually whisk in the chicken broth and heavy cream, bringing the mixture to a gentle simmer until thickened.
6. Stir in the chopped shrimp, crispy bacon, and Parmesan cheese, cooking for 2 more minutes until the shrimp turns pink.
7. Spoon the warm mixture generously over each fresh oyster, then sprinkle the tops with breadcrumbs.
8. Bake for 12 to 15 minutes, or until the topping is naturally browned and bubbling. Serve immediately and enjoy!
