Ingredients
- 2 fresh soft shell crabs, cleaned and prepped
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- Salt and freshly ground black pepper to taste
- Peanut or canola oil for frying
- 2 brioche buns, toasted
- Lettuce, tomato slices, and tartar sauce for serving
Instructions
- In a shallow bowl, soak the cleaned soft shell crabs in buttermilk for about 10 minutes.
- In a separate dish, whisk together the flour, cornmeal, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper.
- Heat about 1 inch of oil in a deep skillet to 375 degrees Fahrenheit.
- Remove each crab from the buttermilk, letting the excess drip off, and dredge thoroughly in the seasoned flour and cornmeal mixture until fully coated.
- Carefully place the crabs top-side down in the hot oil. Fry for 2 to 3 minutes until a crispy golden-brown crust forms.
- Flip the crabs and fry for an additional 2 to 3 minutes until cooked through and vibrant orange-red hues show near the claws.
- Remove the Blue Crabs and let them drain on a wire rack or paper towels.
- Assemble the sandwiches by spreading tartar sauce on the toasted brioche buns, adding lettuce and tomato, and topping with the crispy fried crabs. Serve immediately.
