Instructions
- Heat the coconut oil in a large pot or Dutch oven over medium heat.
- Add the shallots, garlic, and ginger, sautéing until fragrant and softened, about 2 minutes.
- Stir in the red curry paste and cook for 1 minute until well incorporated.
- Pour in the coconut milk and fish sauce, bringing the mixture to a gentle simmer.
- Add the prepared fresh mussels to the pot, tossing gently to coat them in the curry broth.
- Cover the pot with a tight-fitting lid and steam for 5 to 7 minutes, or until all the mussels have opened. Discard any mussels that remain closed.
- Remove the pot from the heat and stir in the fresh lime juice.
- Transfer the mussels and broth to deep serving bowls, garnish with fresh cilantro and lime wedges, and serve immediately with crusty bread for dipping.
