  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fish sauce
  • 1 lime, juiced, plus wedges for garnish
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat the coconut oil in a large pot or Dutch oven over medium heat.
  2. Add the shallots, garlic, and ginger, sautéing until fragrant and softened, about 2 minutes.
  3. Stir in the red curry paste and cook for 1 minute until well incorporated.
  4. Pour in the coconut milk and fish sauce, bringing the mixture to a gentle simmer.
  5. Add the prepared fresh mussels to the pot, tossing gently to coat them in the curry broth.
  6. Cover the pot with a tight-fitting lid and steam for 5 to 7 minutes, or until all the mussels have opened. Discard any mussels that remain closed.
  7. Remove the pot from the heat and stir in the fresh lime juice.
  8. Transfer the mussels and broth to deep serving bowls, garnish with fresh cilantro and lime wedges, and serve immediately with crusty bread for dipping.
