Ingredients
- 2 large fresh lobster tails (4-6 oz each)
- 4 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 lemon, halved
Instructions
- Preheat your grill to medium-high heat (around 400°F).
- Using kitchen shears, carefully cut down the center of the hard top shell of each lobster tail, stopping just before the tail fin. Gently pry the shell open and lift the meat to rest on top of the shell (butterflying).
- In a small bowl, whisk together the melted butter, minced garlic, parsley, paprika, salt, and pepper.
- Brush the exposed lobster meat generously with the garlic butter mixture.
- Place the lobster tails onto the grill, meat side up. Grill for 8-10 minutes, or until the meat becomes opaque and the shells turn a vibrant red.
- Lightly grill the lemon halves face down for 2 minutes.
- Remove the lobster from the grill, brush with any remaining garlic butter, and serve immediately with the charred lemon halves.
