Ingredients

  • 4 fresh Mahi-Mahi fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 2 cups fresh pineapple, finely diced
  • 1/2 red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat your grill to medium-high heat and lightly oil the grates.
  2. In a medium bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño, cilantro, and lime juice. Toss well and set aside to let the flavors meld.
