  • Species: Wahoo (Acantocybium solendri)
  • Total Time: 25 minutes
  • Diet Type: Gluten-Free, Pescatarian, Low-Carb

Preparation Method: Grill

Servings: 4

Ingredients

  • 4 (6 oz) fresh Wahoo (Ono) fillets
  • 2 cups cherry tomatoes
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 3 tablespoons olive oil, divided
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat. Toss the cherry tomatoes in 1 tablespoon of olive oil and place them on a grill pan or basket. Grill until they blister and char slightly, about 5-7 minutes.
  2. Remove the tomatoes, chop them roughly, and mix them in a bowl with the red onion, jalapeño, lime juice, cilantro, and a pinch of salt and pepper to create the relish. Set aside.
  3. Brush the wahoo fillets with the remaining 2 tablespoons of olive oil and season generously with salt and pepper.
  4. Place the wahoo directly on the oiled grill grates. Cook for 3 to 4 minutes per side until the fish is opaque throughout and beautiful grill marks appear. Avoid overcooking to keep the fish moist.
  5. Remove the wahoo from the grill and let it rest for 2 minutes.
  6. Serve the grilled wahoo immediately, generously topped with the fresh charred tomato relish. Pair with your favorite grilled vegetables or a light summer salad for a complete, gratifying meal.
