Ingredients
- 4 (6 oz) fresh Wahoo (Ono) fillets
- 2 cups cherry tomatoes
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and minced
- 3 tablespoons olive oil, divided
- 2 tablespoons fresh lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your grill to medium-high heat. Toss the cherry tomatoes in 1 tablespoon of olive oil and place them on a grill pan or basket. Grill until they blister and char slightly, about 5-7 minutes.
- Remove the tomatoes, chop them roughly, and mix them in a bowl with the red onion, jalapeño, lime juice, cilantro, and a pinch of salt and pepper to create the relish. Set aside.
- Brush the wahoo fillets with the remaining 2 tablespoons of olive oil and season generously with salt and pepper.
- Place the wahoo directly on the oiled grill grates. Cook for 3 to 4 minutes per side until the fish is opaque throughout and beautiful grill marks appear. Avoid overcooking to keep the fish moist.
- Remove the wahoo from the grill and let it rest for 2 minutes.
- Serve the grilled wahoo immediately, generously topped with the fresh charred tomato relish. Pair with your favorite grilled vegetables or a light summer salad for a complete, gratifying meal.
