Ingredients

  • 4 (6 oz) fresh Pacific Halibut fillets, skinless
  • 1 pint mixed heirloom cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 3 tbsp unsalted butter
  • 2 cloves garlic, gently smashed
  • 4-5 fresh thyme sprigs
  • Sea salt and freshly cracked black pepper

Instructions

  1. Remove the halibut fillets from the refrigerator 15 minutes before cooking. Pat them completely dry with a paper towel and season generously with sea salt and freshly cracked black pepper.
  2. Heat the extra virgin olive oil in a large stainless steel or cast-iron skillet over medium-high heat until it begins to shimmer.
  3. Carefully place the fillets in the skillet and cook completely undisturbed for 3 to 4 minutes until a deep golden crust forms on the bottom edge.
  4. Flip the halibut using a fish spatula. Immediately add the butter, smashed garlic, and thyme sprigs to the skillet.
  5. As the butter melts and foams, tilt the pan slightly toward you. Use a large spoon to continuously baste the fish with the aromatic butter for about 2 minutes.
  6. Add the heirloom cherry tomatoes to the pan during the last 2 minutes of cooking, allowing them to blister slightly in the residual heat and buttery pan juices.
  7. Remove from heat. Transfer the halibut to serving plates and generously spoon the blistered tomatoes and pan juices over the top of each fillet. Serve immediately.
