Ingredients
- 4 fresh salmon fillets (about 6 oz each)
- 1 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
- 2 cups sweet corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp extra virgin olive oil (for salad)
Instructions
- In a large bowl, combine the corn, cherry tomatoes, red bell pepper, red onion, cilantro, lime juice, and extra virgin olive oil. Toss well and set aside to let the flavors meld.
