Ingredients

  • 4 fresh salmon fillets (about 6 oz each)
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 cups sweet corn kernels (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 tbsp extra virgin olive oil (for salad)

Instructions

  1. In a large bowl, combine the corn, cherry tomatoes, red bell pepper, red onion, cilantro, lime juice, and extra virgin olive oil. Toss well and set aside to let the flavors meld.
  2. Pat the salmon fillets dry with a paper towel and season generously with sea salt and black pepper.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the salmon fillets skin-side down.
  4. Cook undisturbed for 4-5 minutes until the skin is crispy and releases easily from the pan. Carefully flip the fillets and cook for another 2-3 minutes until the salmon is opaque and flakes easily with a fork.
  5. Divide the sweet corn salad among four plates and top each with a pan-seared salmon fillet. Serve immediately.
