Instructions

  1. Slice the scallops horizontally into thin, even rounds (about 1/8-inch thick). For easier slicing, chill them in the freezer for 10 minutes first.
  2. Arrange the scallop slices in an overlapping circular pattern on a chilled serving plate.
  3. Spoon the passionfruit pulp and seeds evenly over the scallops.
  4. Drizzle the extra virgin olive oil across the dish.
  5. Top with the thinly sliced jalapeño rings.
