Ingredients
- 1 whole fresh Yellowtail Snapper (about 1.5 to 2 lbs), cleaned and scaled
- 1 inch fresh ginger, peeled and julienned
- 3 scallions, thinly sliced (white and green parts separated)
- 1/4 cup low-sodium soy sauce or tamari
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/2 teaspoon sugar
- Fresh cilantro leaves for garnish
Instructions
- Prepare your steamer setup by bringing 1 to 2 inches of water to a low boil in a large pan with a tightly fitting steamer basket or rack.
- Score the yellowtail snapper with shallow slashes on both sides. Season lightly with a pinch of salt and place half of the julienned ginger and the white parts of the scallions inside the cavity of the fish.
- Place the snapper onto a heat-proof plate that fits inside your steamer. Cover and steam for 10 to 12 minutes, or until the flesh is opaque and flakes easily with a fork (a metal skewer inserted into the thickest part should feel warm to the touch).
- Carefully remove the plate from the steamer and pour off any excess water that accumulated. Top the fish with the remaining ginger and the green parts of the scallions.
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, and sugar. Pour the mixture evenly over the steamed fish.
