- 1 large Leek, sliced (white and light green parts only)
- 2 tbsp Olive oil, divided
- 1 tbsp Unsalted butter
- 1 tsp Fresh thyme leaves
- Salt and freshly ground black pepper to taste
- 1 Lemon, cut into wedges
Instructions
- Preheat your oven to 400°F (200°C) to roast the vegetables.
- Toss the cubed butternut squash and sliced leeks with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until tender and caramelized.
- While the vegetables are finishing, pat the halibut fillets dry with a paper towel and season generously with salt and pepper.
- Heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the halibut fillets and sear undisturbed for 3-4 minutes until a golden crust forms.
- Flip the fillets, add the butter and fresh thyme to the pan, and cook for another 2-3 minutes, basting the fish with the melted herb butter until the fish is opaque and flakes easily.
- Divide the roasted butternut squash and leeks between two plates and top each with a pan-seared halibut fillet. Serve immediately with a fresh lemon wedge.
