  • 2 fresh Sea Bass fillets (6 oz each)
  • 1 tablespoon high-smoke point oil (like avocado or canola oil)
  • Salt and freshly ground black pepper to taste
  • 1 large ripe avocado, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon fresh lime juice

Instructions

  1. Prepare the salsa by gently tossing the diced avocado, cherry tomatoes, red onion, cilantro, and lime juice in a bowl. Season with a pinch of salt and set aside to let the flavors meld.
  2. Pat the sea bass fillets completely dry with a paper towel. Season both sides generously with salt and pepper.
  3. Heat the oil in a large skillet over medium-high heat until it shimmers.
  4. Carefully place the fillets in the skillet, skin-side down if applicable, and press gently with a spatula for 10 seconds to prevent curling.
  5. Cook undisturbed for 4-5 minutes until the bottom is crispy and golden brown.
  6. Flip the fillets and cook for another 2-3 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Transfer the sea bass to plates and generously spoon the fresh avocado salsa over the top. Serve immediately.
