Testing Methodology: This recipe was prepared and tested on a standard gas grill using untreated cedar planks soaked for two hours to ensure the perfect infusion of sweet wood smoke flavor without flare-ups.

Serves: 4 people

Ingredients

  • 4 (6 oz) wild-caught salmon fillets, skin-on
  • 1 untreated cedar plank, soaked in water for at least 2 hours
  • 2 tbsp olive oil
  • 1 tbsp whole grain mustard
  • 1 tbsp honey or maple syrup
  • 1 tsp minced garlic
  • Salt and freshly ground black pepper to taste
  • Fresh dill and lemon wedges for garnish

Instructions

  1. Preheat your grill to medium-high heat (around 400°F).
  2. In a small bowl, whisk together the olive oil, whole grain mustard, honey, garlic, salt, and pepper to create the glaze.
  3. Place the soaked cedar plank on the hot grill grates for 3-5 minutes, or until it begins to smoke and lightly char on one side.
  4. Flip the plank over using tongs and carefully place the salmon fillets on the charred side, skin-side down.
  5. Brush the top of the salmon fillets generously with the prepared glaze.
  6. Close the grill lid and cook for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork (internal temperature of 145°F).
  7. Carefully remove the plank and salmon from the grill. Garnish with fresh dill and serve immediately with fresh lemon wedges.
