Ingredients

  • 1 medium acorn squash, halved and seeded
  • 1 tbsp olive oil
  • 1/2 lb fresh domestic blue crab meat
  • 1/4 cup celery, finely diced
  • 1/4 cup yellow onion, finely diced
  • 2 tbsp butter, melted
  • 1/4 cup gluten-free breadcrumbs
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Old Bay seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat an oven to 400°F.
  2. Brush the inside of the squash halves with olive oil, season with salt and pepper, and place cut-side down on a baking sheet.
  3. Bake for 25 minutes until the squash is fork-tender.
  4. While the squash bakes, gently fold together the fresh crab meat, celery, onion, melted butter, breadcrumbs, parsley, and Old Bay seasoning in a mixing bowl.
  5. Remove the squash from the oven and carefully turn them cut-side up. Fill each half generously with the crab mixture.
  6. Return to the oven and bake for an additional 10 to 15 minutes until the crab stuffing is heated through and golden brown on top.
  7. Remove it from the oven and let it rest a couple of minutes before serving.
