Serves: 4 people

Ingredients

  • 1 lb large fresh shrimp, peeled and deveined (tail-on)
  • 1 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs mixed with 1/2 cup cornmeal
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1/2 cup ketchup
  • 2 tbsp prepared horseradish
  • 1 tbsp fresh lemon juice
  • 1 tsp hot sauce

Instructions

  1. In a small bowl, whisk together ketchup, horseradish, lemon juice, and hot sauce to make the cocktail sauce. Cover and refrigerate until ready to serve.
  2. Set up a dredging station with three shallow dishes: one with flour, garlic powder, paprika, salt, and pepper; one with beaten eggs; and one with the panko and cornmeal mixture.
  3. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 350°F.
  4. Dredge each shrimp in the flour mixture, dip in the egg, and coat thoroughly with the panko mixture, pressing gently to adhere.
  5. Fry the shrimp in batches for 2 to 3 minutes until golden brown and crispy. Avoid overcrowding the pot.
  6. Remove shrimp with a slotted spoon and drain on a wire rack.
  7. Serve immediately with the chilled cocktail sauce and fresh lemon wedges.
