Ingredients
- 1 lb large fresh shrimp, peeled and deveined (tail-on)
- 1 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 cup panko breadcrumbs mixed with 1/2 cup cornmeal
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Vegetable oil for frying
- 1/2 cup ketchup
- 2 tbsp prepared horseradish
- 1 tbsp fresh lemon juice
- 1 tsp hot sauce
Instructions
- In a small bowl, whisk together ketchup, horseradish, lemon juice, and hot sauce to make the cocktail sauce. Cover and refrigerate until ready to serve.
- Set up a dredging station with three shallow dishes: one with flour, garlic powder, paprika, salt, and pepper; one with beaten eggs; and one with the panko and cornmeal mixture.
- Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 350°F.
- Dredge each shrimp in the flour mixture, dip in the egg, and coat thoroughly with the panko mixture, pressing gently to adhere.
- Fry the shrimp in batches for 2 to 3 minutes until golden brown and crispy. Avoid overcrowding the pot.
- Remove shrimp with a slotted spoon and drain on a wire rack.
- Serve immediately with the chilled cocktail sauce and fresh lemon wedges.
