Serves: 4 people

Ingredients

  • 4 fresh swordfish steaks (about 6 oz each, 1-inch thick)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine the softened butter, minced garlic, parsley, and lemon juice. Set aside.
  3. Brush the swordfish steaks with olive oil on both sides and season generously with salt and pepper.
  4. Place the swordfish on the hot grill and cook for 4 to 5 minutes per side, until the fish is opaque throughout and flakes easily with a fork.
  5. Remove the swordfish from the grill and immediately top each steak with a dollop of the garlic herb butter so it melts over the fish.
  6. Serve hot with fresh lemon wedges and your favorite grilled vegetables.
