Ingredients
- 4 (6 oz) fresh Atlantic salmon fillets, skin-on
- 1 lb Brussels sprouts, trimmed and halved
- 2 medium sweet potatoes, peeled and diced
- 3 tbsp olive oil, divided
- 2 tbsp whole grain mustard
- 2 tbsp pure maple syrup
- 1 tsp garlic powder
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet.
- In a large bowl, toss the Brussels sprouts and sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet and roast for 15 minutes.
- While the vegetables roast, whisk together the remaining 1 tablespoon of olive oil, whole grain mustard, maple syrup, and garlic powder in a small bowl.
- Remove the sheet pan from the oven. Push the vegetables to the edges to make room in the center.
- Place the salmon fillets skin-side down in the center of the pan. Brush the maple-mustard glaze generously over the top of each fillet.
- Return the pan to the oven and bake for an additional 10 to 12 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
