Ingredients

For the Scallops:

  • 1.25 lbs dry-packed jumbo Atlantic sea scallops (approx. 12 count, U-10 or U-12), side muscle (foot) removed
  • 1.5 tbsp avocado oil or high-smoke-point vegetable oil
  • 1 tbsp unsalted butter
  • Flaky sea salt and freshly cracked white pepper, to taste

For the Pomegranate Beurre Blanc:

  • 1/2 cup 100% pure pomegranate juice (unsweetened)
  • 1/4 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1.5 tbsp finely minced shallots
  • 1 tbsp fresh lemon juice
  • 1/2 cup (1 stick) cold unsalted butter, cubed into 1/2-inch pieces
  • Fine sea salt and white pepper, to taste

For Garnish:

  • 2 tbsp fresh pomegranate arils
  • 1 tbsp finely sliced fresh chives

Instructions

  1. Step 1: Prep and Dry the Scallops: Thoroughly pat the scallops dry on all sides using paper towels. Moisture is the enemy of a crisp sear. Place them uncovered on a plate lined with fresh paper towels in the refrigerator for 10 minutes to dry the surface further. Remove and season generously with flaky sea salt and cracked white pepper just before cooking.
  2. Step 2: Reduce the Sauce Base: In a small stainless steel saucepan over medium heat, combine the pomegranate juice, white wine, minced shallots, and lemon juice. Bring to a gentle simmer and reduce until the liquid is syrupy and measures roughly 2 tablespoons (about 8 to 10 minutes). Reduce heat to low.
  3. Step 3: Mount the Butter (Beurre Blanc): Whisking continuously over low heat, add the cold cubed butter one or two pieces at a time. Allow each piece to emulsify and melt into the liquid before adding the next, creating a silky, opaque, glossy pinkish-red emulsion. Once all butter is incorporated, season with a pinch of fine sea salt and white pepper. Remove from direct heat and keep warm (do not let it boil, or the sauce will break). Strain through a fine-mesh sieve if a satin-smooth texture is preferred.
  4. Step 4: Pan-Sear the Scallops: Heat a large heavy-bottomed stainless steel or cast-iron skillet over high heat until wisps of smoke appear. Add the avocado oil, swirling to coat the pan. Carefully place the scallops in the skillet, leaving ample space between each so they sear rather than steam. Press each scallop down gently for the first 5 seconds.
