Ingredients

  • 4 lbs fresh soft-shell clams (steamers), purged and scrubbed
  • 6 ears of fresh sweet corn, husked and halved
  • 1 lb small red potatoes
  • 1 large onion, quartered
  • 2 cups dry white wine
  • 2 cups water (or clam broth)
  • 1 cup unsalted butter, melted (for dipping)
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. In a large, heavy-bottomed stockpot, combine the water, white wine, and quartered onion. Bring to a rolling boil over medium-high heat.
  2. Add the red potatoes to the pot, cover, and steam for about 10 minutes until they just begin to soften.
  3. Add the halved sweet corn to the pot, replacing the cover, and steam for another 5 minutes.
  4. Carefully add the fresh steamer clams to the top of the pile. Cover tightly and steam for 8 to 10 minutes, or until all the clam shells have opened wide. Discard any clams that remain closed.
  5. Carefully remove the clams, corn, and potatoes to a large serving platter. Serve immediately with warm melted butter, fresh lemon wedges, and a side of the steaming broth.
